Marty told the journalist, “So this year we are back at Hotelex, which is the biggest coffee expo in China. All of our friends are here. The whole industry is here. I think it's our eighth or ninth year to participate. And you know, it's really fun to be with all the different coffee people, all the different parts of the industry together.

“This year we came specifically to share Yunnan specialty coffee, so all these years coming to Shanghai to the expo, trying to push Yunnan specially coffee all around China. It was super tough in the beginning. No one knew that coffee grew in China, even Chinese. We would go out and they would say, are you an English teacher? I said no, I live in Puer. And they said oh, you work with Puer tea? I said no, I work with Puer coffee.

“But now, this year I just walked from the roaster kind of cafe area, walked over here and found at least twenty shops are promoting Yunnan coffee as their main promotion kind of angle for this show. So, I was super excited to see that.

“Last year we did two events with them. One of the events was like an expo or like coffee festival. There we gave some speeches and we shared about Yunnan coffee and that's how we first got to know each other. And then, we did a huge event there together with around almost eight hundred Q-graders all coming together cupping thousands of samples and making the whole new Yunnan flavor map.

“We try to figure out what are all the regional specificity and flavor while the different regions from Baoshan, Menglian, Mojiang, Lincang and Simao and figure out what are the flavor characteristics of each region.

“So, we had that big event there last year. We're looking forward to how we can work together with them in the future.

“It's called cupping. It is a large number of people in the industry who have carried out. A model for regular coffee. Because if you make a pot by pot, it's slow. Then there are not so many people to participate. Here's taking a little bit on this spoon and then……Very nice. There are different ways to deal with it.

“They are all Yunnan beans. But each taste is different. This is washed and this is honey treatment. Many sunburn methods.”

Henrik introduced that, “I've been tasting coffees from Yunnan for four to five years, and I think that there's a big improvement in the quality. That's interesting like previously a lot of the coffees were very heavily fermented. Do you know washed coffees? Washed coffee is performing well on the table and it's very interesting.”

Kim said, “The aroma of this rose is really very fragrant. You need to try it. This ‘shimmer’ is delicious, sweet, then fruit tonality. It's really delicious."

Marty told the journalist, "Shanghai is a fascinating city. It's a humongous city. It's a super safe place. A lot of people feel like China it's really far away. It's totally different. Will I be able to find food that I like? Will I be able to find comforts of home?

"But Shanghai is a very very international city. There's every kind of food. You'll find restaurants from all around the world. You'll find people from all around the world. There's a huge foreign community here. And I think you could easily live in Shanghai without speaking Chinese. It's a very livable city. It's a great place I love to come visit here.”

近日,记者来到2024HOTELEX上海国际咖啡美食文化节现场,让我们一起来听听云南咖啡的故事。

马丁告诉记者:“今年我们回到Hotelex,这是中国最大的咖啡博览会。我们所有的在咖啡行业里的朋友都在这里。这是我们第八或第九年参加了。和不同的咖啡人在一起交流真的很有趣并且行业的所有不同部分都在一起。今年我们专门来分享云南特色咖啡。”

“这些年我们一直来上海向全国各地的人推广云南的特产尤其是咖啡。开始的时候非常艰难。没人知道中国也是种咖啡的,中国人也不知道。我们出去的时候他们会说,你是英语老师吗?我说不,我住在普洱。他们说,你做普洱茶的工作?我说不,我做普洱咖啡的工作。但现在,今年我刚从其他咖啡馆区走出来,走到这里,发现至少有20家商店在推广云南咖啡作为他们的主要宣传商品。所以看到这个我非常兴奋。”

“去年我们和虹桥品汇一起做了两个项目。其中一个活动就像博览会或咖啡文化节。在那里我们做了一些演讲,分享了云南咖啡。我们就是这样开始了解虹桥品汇的。我们一起搞了个大活动,大约有八百位咖啡测试师来测试好几千杯的咖啡。并且制作全新的云南风味地图,试着弄清楚当地咖啡的特色和风味。像是保山、孟连、墨江、临沧、思茅,去弄清楚这些地区的咖啡风味特征是什么。去年我们在那里举办了一个大型活动。我们期待着我们将来如何与虹桥品汇合作,继续连接上海和云南的咖啡世界。”

“这个是一个环节,叫杯测。它是大部分行业内的人去进行的品尝咖啡的一个模式。因为如果冲了一壶一壶的话会很慢,然后也没那么多人可以参与。这是拿一点在这个调羹上,然后……很不错,有不同的处理方式。这些都是云南豆,但各个味道都不一样,这个水洗的,这个是蜜处理,然后有很多种日晒法。”

亨利克介绍道:“我喝云南咖啡已经有四五年了,我认为质量有了很大的提高。很有趣,以前的话,很多咖啡都是高度发酵的。然后现在的咖啡经过水洗等各种方式后,这些的咖啡表现出的味道非常不错,这非常有趣。”

金先生说道:“这个玫瑰的香气是真的很香!必须要试一下!这个‘微光’真好喝,甜,是水果调性,真的是很好喝的。”

马丁对记者说道:“上海是一座迷人、巨大的城市,是个超级安全的地方。很多人都觉得中国真的很远,和我们生活的地方完全不同。我能找到我喜欢的食物吗?能像在家里一样舒服吗?但是上海是一座非常非常国际化的城市,这里有很多很多人,各种各样的美食。你会发现世界各地的餐馆、来自世界各地的人,这里有一大群外国人。我认为可以很容易地住在上海,不会说中文也没问题。这里是一座非常宜居的城市,一个很棒的地方。我喜欢这里。”
